HOW TO MAKE A GOOD ESPRESSO

As in all things "has more practice makes perfect", meaning that it takes time to become familiar with the machine and make habitual gestures needed to achieve an excellent result. The machine does not admit mistakes or inaccuracies, has its rules and must be strictly observed, otherwise the result will be a "ciofeca" compared with which the brewed coffee with mocha seems to be like the "Tazza d'oro" of the Pantheon.

But if after the first espresso you have resisted the temptation to put the machine in the his box and you're willing, I will not say to love it, but at least to establish a warm friendship, know that the foundation of a loyal and lasting relationship must be the astral combination of 3 variables :


· Temperature of the machine and portafilter
· Coffee grinding
· Amount of coffee powder

I have summarized in a few points the sequence of operations that must be treated so that they become customary, in reality there would be no need if you read carefully the original instructions
 

RULES

1. Insert the filter holder with the filter and turn on the machine
2. Wait at least 10-15 minutes so that the filter holder becomes hot to handle
3. heat the cups, preferably with steam, or filling them with boiling water
4. Remove the filter holder and fill the filter with coffee powder (7 grams recommended dose, 8 if you want it stronger)
5. Raise the lever and wait few seconds to let the water come in in the group
6. Lower the lever to make espresso. The lever has to put up a strong resistance and non-elastic
7. If the coffee comes out too quickly grind the beans finer
8. If the coffee does not come out, grind coarsely or put less powder
9. In each case the second espresso is often better than the first, so in this case, chivalrously offer the first to your wife



CAUTION: AFTER DONE COFFEE UNSCREW VERY SLOWLY HOLDER FILTER UNTIL YOU HEAR QUIT THE MIST, REMOVE ONLY WHEN THE SESSION LEVER IS DOWN AND NO LONGER FEEL QUIT STEAM, OTHERWISE IT COULD SPLASH WATER AND STEAM FROM HOLDER FILTER
